Ingredients

  • 3/4 cup vegetable oil
  • 3 eggs 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 tsp vanilla
  • 2 cups pastry flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp cloves
  • 2 cups grated carrot
  • 1 cup toasted coconut, split in half
  • 1/2 cup white chocolate chips
  • 1 1/4 cup pistachios, salted or unsalted, roughly chopped and divided in half
  • 250 g cream cheese, softened
  • 1/4 cup butter, softened
  • 2 1/2 cups icing sugar
  • 1 tsp vanilla
  • 1 tbsp lemon juice
