Ingredients

  • 5 egg whites, at room temperature
  • 1/8 teaspoon cream of tartar
  • 1 cup plus 2 tablespoons sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsalted pistachios, finely chopped
  • 6 large egg yolks
  • 1 cup sugar
  • Juice and finely grated zest of 4 lemons (about 3/4 cup)
  • 1 tablespoon plus 1 teaspoon finely grated fresh ginger
  • 1 stick (4 ounces) cold unsalted butter, cut into pieces
  • 1 cup heavy cream
  • 1 pound strawberries, hulled and sliced (3 1/2 cups)
