Ingredients

  • Polenta
  • 1 small onion, diced
  • 1-2 Tbs. oil or butter
  • 4 cups water
  • 1 cup polenta (or coarse grits)
  • 1/4 grated Parmesan cheese
  • (a few spoonfuls of milk)
  • 1-2 cloves garlic
  • 1-2 Tbs. oil
  • 1-2 sweet peppers, diced
  • (1 jalepeño, diced)
  • 4-10 tomatoes, diced (the number depends on the size of the tomatoes and how tomato-y you like it)
  • dash of ground cumin
