  • 1 lb 6 oz course ground pork shoulder or butt
  • 6 oz pork liver
  • 1/2 cup dry white wine
  • 2 tsp pink salt
  • 1 tsp black pepper
  • 1/4 tsp marjoram
  • 3 small bay leaves
  • 1 lb 8 oz pork liver
  • 4 Tbs butter
  • 1 tsp oil
  • 2 onions, cut in half and then thinly sliced
  • 1 tsp salt
  • 4 garlic cloves, minced
  • 1/8 - 1/4 cup brandy
  • 1/4 - 1/2 cup cream
  • 1 tsp black pepper
