Combine the seasonings listed in the “pork” section andliberally rub your chops. So the dish is asearedpork chop over acauliflower & potato puree, accompanied by sautéedasparagus, finished with amushroom & Madeirasauce
Melt more butter with the onion mix before adding the sliced mushrooms. Add the wine or chicken broth whichever you prefer andbring the sauce to a simmer
These porksirloinchopsarebraisedin the oven inanaromatic onion, mushroomandtarragonsauce. Sprinkle both sides of the porksirloinchops generously with saltand pepper
