soft goat cheese (chevre) (2oz, 60gr) my ‘brand’ is Chevraux, I think in the U.S. it’s Chavrie; it comes in a square-ish cardboard or plastic container, 5.5oz (150gr).
One is to roast the potatoes very slowly so that they become meltingly tender and waxy (as opposed to the crispy/fluffy texture of my favorite Butter Roasted Potatoes)
replace the bacon with a few walnuts or pine nuts, throw in a couple of handfuls of greens, like arugula for instance, add an apple, some mushrooms or caramelized onions, or a few chunks of cooked chicken… with very little imagination, you could easily turn this into a complete and delicious meal
But I would definitely size it down and serve it to myself for a gratifying and fire-crackingly flavourful lunch or dinner - nutritiously comprising of gluten and grain free carbs along with a handful of vegetables and sprinkling of protein
There are times where I want nothing more than a big, juicy steak, a loaded baked potatoe, garlic bread and then throw a salad in there for good measure
Add the peaches to the kale, top with crumbled goat cheese, and then toss together with dressing. I've been keeping it simple withmy kale salads by making a simple dressing of olive oil, lemon juice, and sometimes a few squirts of maple syrup or honey

I make so much withpotatoesand cheese, I could have a dozen recipes here. This is what I came up withand I really liked it and Romeo liked it a lot but not as much as some of my other cheese dishes
