Potato soup, green beans, and bacon

  • 8 servings
  • 3 large potatoes, peeled and cubed
  • 300 gr steamed green beans and chopped into pieces of 1 cm
  • 250 gr chopped bacon
  • 2 cups cooking water from potatoes
  • ½ cup light cream
  • 3 tablespoons chopped parsley
  • 1 cup finely chopped onion
  • 1 cup chicken broth
  • 2 cloves of garlic crushed
  • Salt and pepper to taste


    Cook the potato cubes in enough salted water
    Once it is cooked strain, reserving the water
    Smash the potatoes with the cream, and cooking water until you achieve a very loose mashed potato
    In a pot, fry the bacon until crispy, remove from the pot
    Drain most of the fat from the bacon
    Add the onion and brown
    Add the green beans and garlic and cook for 1 minute taking care the garlic does not burn
    Add the mashed potatoes, bacon, broth, more cooking water and parsley. You don’t have to add all the broth and/or water. The idea is to have a thick consistency but not so thick that it looks like oatmeal.
    Season with salt and pepper
    Cook for 10 minutes over low heat so that all flavors are integrated
