  • 2 tablespoons extra-virgin olive oil
  • 4 skin-on, bone-in chicken breasts
  • Salt and pepper
  • 1 onion
  • 3 cloves garlic, finely chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • 1/2 pound small red potatoes, halved
  • 1 8 ounce can Spanish-style tomato sauce, such as Goya
  • Chopped cilantro, for sprinkling
