Ingredients

  • 2 to 3 lbs pork shoulder or butt (I used the one with a little fat, but lean is perfect, too)
  • 5 cloves garlic
  • 1/2 tablespoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • a dash of cinnamon
  • 1/4 teaspoon cayenne pepper
  • juice of 1 lime 1/4 cup orange juice
  • 12 ounces rootbeer (or beer if you don't want it sweet)
  • 1/4 cup salsa (I like to use a less chunky one)
  • ⅔ cup all-purpose flour
  • ½ cup yellow corn meal
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 can diced green chiles, optional (I skipped this)
  • ⅓ cup milk
  • 1 egg 1 can cream corn
  • 2-3 cups carnitas
  • 1 cup barbecue sauce (or enchilada sauce)
  • 1 cup shredded white cheese (Jack, White Cheddar, Pepperjack, etc.)
