Pumpkin Bread Pudding with Caramel Sauce (Make-Ahead!)

  • 8 cups cubed bread
  • 2 cups half and half
  • 1 cup dark brown sugar
  • 4 large eggs
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • ½ cup dried cranberries
  • ¼ cup toasted chopped pecans
  • 1¼ cups dark brown sugar
  • ½ cup salted butter
  • ½ cup heavy whipping cream
  • 3 minutes. Pour warm sauce over warm/re-warmed bread pudding. Garnish with powdered sugar, if desired. Notes Bread pudding can be served at room temp or reheated. It's absolutely amazing when served warm with warm caramel sauce, and a scoop of vanilla bean ice cream on top!Caramel sauce can also be made the night before, but will need to be re-heated before drizzling onto the bread pudding.
