  • ½ C brown sugar 1 C heavy cream 1 C pumpkin puree ½ tsp allspice ¼ tsp cinnamon ¼ tsp nutmeg ⅛ tsp salt ½ C sugar Instructions Preheat oven to 325. In a medium bowl, whisk together yolks and brown sugar. Add in heavy cream, pumpkin puree, allspice, cinnamon, nutmeg, and salt. Whisk until combined. Fill 4-5, 4 or 5 inch, ramekins with pumpkin mixture about ¼-1/2 inch from the top. Place ramekins in baking dish and fill baking dish with enough hot water to reach halfway up the sides of the ramekins. Bake for 30-35 minutes or until center is mostly set. Remove from oven and refrigerate until completely cooled. Sprinkle each brulee with about 1 tablespoon sugar and heat with kitchen torch until sugar is melted and turns crisp and dark brown. 3.3.3077
