Quick And Easy Chicken Fried Rice

  • 1 lb, boneless and skinless chicken breast, cut into short, thin strips
  • 1 cup (I used long-grained basmati rice)
  • 1 1/2 cups Oil – 1 1/2 tbsp, divided (I used sesame oil for flavor, you can use any oil of choice)
  • 1 tbsp, grated or finely chopped
  • 1 tbsp, finely chopped
  • 1 1/2 cups water to a boil in a pan. Add rice and 1/2 tsp salt, reduce heat to low, cover and cook till done. Once rice is cooked, fluff it with a fork and keep covered till ready to use. (You can also use 3 cups of already cooked, day-old rice. Gently re-heat it up in a loosely covered bowl in the microwave.)
