  • ¼ cup sugar ¼ cup water, comfortably warm, not hot 4½ teaspoons of yeast ¾ cup buttermilk, room temp 1½ teaspoons baking powder ⅓ cup light vegetable oil ( I use peanut oil) 1 teaspoon salt 2 eggs, room temperature 4 - 4½ cups flour ¼ cup butter, melted (for brushing the rolls) Instructions Preheat the oven to 400F Add the sugar and yeast to the warm water and set aside for 10 minutes Cover the eggs with hot water from the tap to warm them until needed Warm the buttermilk so that it is just warm to the touch Beat the eggs slightly and add them to the yeast mixture with the buttermilk, salt, oil, and baking powder. Pour the whole mixture into a mixing bowl fitted with the dough hook. Add the 4 cups of flour and and mix for one minute Check to see if the dough is too sticky and add more flour if necessary. Mix for another minute. Turn the dough out and knead lightly just to pull it together. Cut it into 18 - 24 equal pieces and shape quickly into rolls. Brush them with melted butter. Arrange them on a lightly oiled cookie sheet. Let rise in a warm place for 10 minutes. Place in the preheated oven. Bake at 10 minutes, or until done. Brush with melted butter, again.
