The blackbeans, quinoa, veggies and cheese give the filling a wonderful texture, and the creamy avocado lime sauce adds a satisfying decadence when you dig into these peppers
Drain blackbeans and corn. When bean mixture is hot through, prepare the enchiladas. (If you are adding hot peppers, add them here) When soft and translucent, add the corn, beans, tomato sauce, salt and cumin
Transfer quinoa to a colander and rinse under cold running water. 1/4 teaspoon freshly ground black pepper. 1 cup quinoa, rinsed. 1 cup cooked or canned blackbeans, drained. 2) Bring 2 cups of water to a boil in a small saucepan, add quinoa, reduce to heat to low, cover and simmer until quinoa is tender and all water has been absorbed, about 15 minutes. 3) Add blackbeans, corn, bell pepper, scallions and cilantro to the quinoa bowl. 1/4 teaspoon freshly ground black pepper. 1 cup quinoa, rinsed. 1 cup cooked or canned blackbeans, drained
To make each taco, place about ¼ cup of the quinoa/blackbean mixture in the center of a tortilla. Use a wire mesh sieve to rinse the quinoa very, very well (this removes the bitter taste)
Blackbeans and quinoa seemed like the perfect combination. I cooked the quinoa separately and added it to the bean mixture at the last minute, but that left the quinoa too flavorless, and the beans too dried up
One of the dishes they served was a quinoa salad made with a corn and blackbean salsa. I love quinoa, and I love salsa, but never had I thought of combining them until attending a Chicago media event to preview upcoming menu items at the Corner Bakery
In a large bowl, combine quinoa, tomatoes, blackbeans, and scallions. Though I've eaten quinoa before, I'm a little embarrassed to admit I've never made it until now
