Ingredients

  • 2 servings
  • one cup of uncooked quinoa
  • 2 small chicken thighs, deboned
  • 1 tsp salt
  • 3 tbsps olive oil
  • 3 cloves of garlic, crushed
  • 1 medium red onion
  • 1 tbsp tomato puree
  • 1/3 c sultanas
  • 1 tsp paprika
  • 1/4 tsp ground black pepper
  • 1/4 tsp cayenne (optional)
  • 1/4 of a small sweet red pepper, cut into chunks
  • 1 1/2 c chicken stock
  • 1/2 c frozen green peas
  • salt to taste
  • Remove the lid, add the green peas and turn the heat up to let the mixture absorb all the liquid. Adjust the seasonings.
  • Turn the heat off. Put the lid back on and let rest for 5 minutes
