  • 1/8 teaspoon black pepper
  • 1 large egg, beaten

  • 1 teaspoon canola oil
  • 1/2 onion, thinly sliced (about 1/2 cup)
  • 1 (5-ounce) bag baby spinach
  • 1/2 cup low-fat milk (I used 1%)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper
  • 4 large eggs
  • 2 large egg whites
  • 1½ ounces feta cheese, crumbled
