Ingredients

  • 5 inch cake
  • 3 rounds of
  • 5 inch cake
  • 1 1/8 cups cake flour
  • 1/2 cup whole milk
  • 3 large egg whites
  • 1 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1 1/2 cups sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 6 tbsp unsalted butter
  • 350 F. Prepare as many
  • 1/3 cup sugar
  • 2 tbsp flour
  • 2 tbsp heavy cream
  • 1 stick butter, cubed and slightly cold
  • 1/4 to
  • 1/3 cup apricot jam, melted
  • 15 minutes Crumb coat the cake with frosting and chill until that layer of frosting has set,
  • 15 minutes in the freezer
