Rajma/Redkidneybeans. Instead of rajma ,chickpeas/channa can also be used. Coming to the recipe,the rajmatikki rolls are very easy to make and the tikkis can be made in advance
Recently I bought a pack of Rajma ( Red kidneybeans in English,Karamani or Karamani Payir in Tamil , Rajma in Punjabi,Hindi , Capparadavare in Kannada, Chikkuduginjalu / Nallachikkudu in Telugu ) to try some gravy/masala for rice
If you are deep frying the tikkis, then dip them in a thin batter made with all purpose flour/ maida and roll them in bread crumbs and then do, otherwise the patties might break when you drop them into the oil
Heat oil in a pan , add jeera/cumin seeds,bay leaves, cinnamon,cloves, fennel seeds, pepper ,cardamom,star anise,ginger garlic paste,sliced onions and saute well
Cook till rajma is soft and cooked. Slightly press a few rajmas with the back of a ladle. Wash the rajma and soak in enough water for 5-6 hours. Add the soaked rajma is a pressure cooker with 2 tsp of salt and 3 cups of water. Add the cooked rajma along with the water and cook on low heat for 10-15 minutes
As I only make this Rajma Masala for chapathis and these RajmaTikkis for the kids snacks, I’m so glad that I got to try yet another Sundal with rajma for this Navaratri Season
Goes well with bread and chappathi, but then who wants any accompaniments for cutlets. When the oil become very hot, fry the tikkis till the outside becomes golden brown
