Ingredients

  • Blueberries
  • 20 minutes
  • 12 slices
  • 2 cups raw cashews
  • Juice of one lemon
  • 1/2 tsp stevia
  • 1/2 tsp vanilla
  • 1 1/2 cups wild blueberries
  • 1/2 cup dates
  • 1 cup pecans
  • 1/2 cup unsweetened shredded coconut
  • 1/4 tsp stevia
  • 1/4 tsp salt
  • 2-4 tsp water
  • 1 cup of blueberries to the remaining raw cheesecake filling in the blender or food processor and process until smooth. Pour over the chilled cheesecake, cover and freeze until solid, roughly 5 hours
  • 3 hours and garnish with the remaining
  • 1/2 cup of blueberries
