Ingredients

  • 2 tbsp vegetable oil
  • 1 or 2 scallions, sliced
  • 1 cup cooked rice
  • 2 eggs, beaten
  • 1/3 cup cooked diced ham or any other leftover cooked meats
  • 2 tbsp soy sauce
  • 2-3 minutes Push the rice to the side of the pan, add the eggs and softly scramble
