Ingredients

  • 1/2 cup chopped onion, from 1 small onion
  • 1/2 cup sliced fresh mushrooms
  • 2 pounds skin-on, bone-in chicken thighs, about 4 pieces
  • 2 cups uncooked long-grain brown rice
  • 2 tablespoons wild rice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 cups low-sodium chicken broth, added when ready to cook
