Ingredients

  • 30 minutes; total time: about 1 hour
  • 3 lb chicken, skinned, cut into serving pieces
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • ¼ C cornmeal
  • 3 Tbsp safflower oil
  • 1 onion, chopped fine
  • 1 carrot, peeled, chopped fine
  • ½ small bell pepper, chopped fine
  • 3 cloves garlic, chopped fine
  • ¾ lb tomatoes, preferably Italian plum variety, seeded, chopped coarse, juices reserved
  • 1 ½ C unsalted chicken stock (preferably homemade—see recipes in Basics section)
  • 1 Tbsp curry powder
  • 2 tsp mango chutney
  • 1 bay leaf
  • 1 ½ Tbsp dark raisins
  • 1 ½ Tbsp golden raisins
  • 1 Tbsp sesame seeds
