  • 1-1/3 cups
  • 2 bananas
  • 12 dates
  • ½ cup coconut oil, melted 3 teaspoon vanilla extract 2 bananas, mashed well 12 dates, pureed in food processor 1 cup garbonzo bean flour ½ cup cocoa powder ¼ teaspoon salt ½ cup chopped nuts (optional) Instructions Set out 4 eggs on counter for about 30 minutes so they can be baked at room temperature (this helps with the rise of wheat-free baked goods) Preheat oven 325 degrees Melt coconut oil in microwave Whisk room temperature eggs really, really well with a whisk (this also helps with rising wheat-free baked goods) Combine wet ingredients (oil & vanilla & banana & dates) together and whisk well Combine dry ingredients (garbonzo bean flour, cocoa, salt) in a second bowl and mix well with a spatula Add wet bowl into dry bowl Add nuts (optional) and stir with spatula Coat brownie pan or muffin pan with coconut oil (I just use my fingers) Add batter pan Bake for about 20 minutes. Check with toothpick. Immediately remove muffins and place on Cooling Rack 3.2.2885
