Ingredients

  • 100 g butter or baking margarine
  • 100 g soft light brown sugar
  • 2 eggs
  • 50 g plain flour
  • 25 g polenta
  • 25 g ground almonds
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 tsp koekkruiden blend (or other warming aromatic spices
  • 1 eating apple roughly grated
  • 1 tsp flaked almonds (optional)
  • 1 lb loaf tin. Smooth the top of the batter and scatter the flaked almonds over.
  • /375 F for 20 – 25 mins until risen.
