  • 2 tablespoons olive oil
  • 1 medium red onion, quartered and thinly sliced
  • 1 garlic clove, minced
  • 4 cups packed finely sliced red cabbage (just about a pound)
  • Kosher salt and fresh ground pepper
  • Juice of 1 lemon 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon finely chopped fresh parsley
  • Crumbled feta cheese
