1 - Place all the ingredients (except pears) in a saucepan.
2 - Make sure the saucepan is large enough to fit all the pears.
3 - Bring the red wine sauce mixture to a simmer while stirring to dissolve the sugar.
4 - Peel the pears ONLY when the poaching liquid is ready to prevent discoloring.
5 - Lower the peeled pears into the poaching liquid.
6 - Let the pears poach in the liquid on medium-low heat for 30 minutes.
7 - Rotate the pairs every 10 minutes to ensure even cooking.
8 - Let the pears cool down in the poaching liquid.
9 - You may serve this chilled or at room temperature.
10 - Serve with your favorite vanilla ice cream or whipped cream.

Reduce the heat to medium and add the pears to the pan, stems pointing up. You can even add the butter and cream just before the syrup turns to caramel and you will have a sauce that is more of a creamy red/purple with a bit more fruity of a flavor
