Ingredients

  • 1 kg lamb cutlets
  • 2 large onions
  • 100 gm Greek style yoghurt
  • 2 tbsp mustard oil
  • 6 cloves garlic
  • 1 inch ginger
  • freshly squeezed juice from 1 lime
  • 1 cm cinnamon stick
  • seeds from 3 green cardamoms
  • 5 cloves
  • 1 tsp white peppercorn
  • 1 tsp mace
  • 1 tbsp ghee
  • 2 tbsp poppy seeds
  • 10 cashew nuts, soaked in water and crushed to paste (optional, if you prefer a nutty flavour)
  • 2 green chillis
  • few strands of saffron soaked in 1 cup of milk at room temperature
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup water
  • 1 tsp ghee
  • 2 bay leaves
  • 2 dry Kashmiri chillis
  • 4 whole black peppercorns
  • 1 cinnamon stick
  • 4 cloves
  • seeds from 2 green cardamom
