Ingredients

  • 1/2 cup green lentil, washed
  • 1 cup basmati rice, uncooked
  • 2 cups water
  • 3/4 cup vegetable stock
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 4 stalks celery, chopped
  • 2 teaspoons cumin
  • 1/2 teaspoon cinnamon
  • 1 grated lemon, zest of
  • 1 cup peeled tomato, diced (optional)
  • 4 cups fresh spinach, well washed and cut in 1/2 inch strips
