  • 8 ounces pigeon peas, canned, drained
  • 8 ounces black-eyed peas, canned, drained
  • 2 cups water
  • 1 (13 1/2 ounce) can coconut milk
  • 1 teaspoon garlic salt
  • 1 onion, sweet, large, diced
  • 2 green onions, diced
  • 1 tomato, large, diced (optional)
  • 1/2 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 1/2 teaspoons thyme, fresh
  • 1 teaspoon sweet paprika
  • 1/4 habanero pepper, small, finely chopped (optional)
  • 2 cups long-grain rice
