Ingredients

  • 1 recipe Flaky Piecrust, prebaked (see bottom)
  • Salt
  • 2 pounds spinach, trimmed of thick stems and well washed
  • 1 medium onion, roughly chopped
  • 1 teaspoon minced garlic
  • 3 eggs, lightly beaten
  • ½ cup cream, half‐and‐half, or milk
  • 1 cup freshly grated Parmesan cheese
  • Freshly ground black pepper
  • ½ cup bread crumbs, preferably fresh
  • 2 tablespoons butter or extra virgin olive oil

  • 1 cup plus 2 tablespoons all‐purpose flour, plus more for rolling
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • 8 tablespoons cold unsalted butter, cut into about 8 pieces 3 tablespoons ice water, plus more if necessary

  • Steps
  • Generous Pie Shell For a 10‐Inch or Larger Pie or a Deep‐Dish Pie
  • Increase the flour to 1½ cups, salt to ¾ teaspoon, sugar to 1½ teaspoons, butter to 10 tablespoons, water to ¼ cup.
