Ingredients

  • RICOTTA LEMON COOKIES WITH ALMONDS {PRINT THIS RECIPE}

  • For the cookies
  • 1 stick butter, softened to room temperature (I always use salted but you can use unsalted if you prefer)
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 cup ricotta cheese
  • 1 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons lemon zest
  • pinch of kosher salt
  • 1 cup of chopped, toasted almonds (optional)
