  • 2 medium eggplant (cubed)
  • 1 medium onion (minced)
  • 2 cloves garlic (minced)
  • 1/2 cup tomato puree
  • 1/3 cup Parmigiano Reggiano
  • 3 tbs oil
  • basil
  • salt to taste
