Ingredients

  • 2 free range chicken leg quarters
  • 1 large potato, scrubbed, but unpeeled
  • 1 sweet potato, peeled
  • 1 parsnip, peeled
  • 2 carrots, peeled
  • 2 medium beetroot, peeled
  • 1 small turnip peeled
  • 1 large onion, peeled and quartered
  • olive oil
  • salt and pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • a drizzle of honey
