I was going through this month's issue of Food Network's magazine looking for something easy to make for dinner but yet flavorful and I found this recipe
I didn't have a lot of the vegetables called for in the recipe so I just went with what I had. Come to think of it, I may have had all the ingredients on hand when I originally planned on making this but I used the vegetables in other recipes throughout the week
Feel free to get creative and make this recipe your own. I used fresh tagliatelle for this recipe. The garlic and goat cheese sauce is far lighter than an alfredo and lets the vegetables take center stage
roastedchicken thighs with seasonal vegetables. A simple lemon vinaigrette is drizzled atop the chickenandroastedvegetables just before serving, adding a delightful fresh flavor to the whole dish
I must say that I had to really step up to make this recipe as I had to stuff a chicken for the first time in my life, which is not something I was looking forward to but it had to be done
With that, on to the recipe. This recipe is not necessarily that hard to make, but it takes a lot of opening and closing the oven so it is probably not the best dish to make in the blazing summer heat
Season well with salt and pepper. Place thighs on sheet pan with room between them. Put artichokes, potatoes, fennel, thyme, and lemon slices, ¼ cup olive oil, salt and pepper in bowl and toss
Serve chickenwith mashed potatoes & gravy on the side. Combine root vegetableswith olive oil, spread on a baking sheet, sprinkle wit salt and bake until chicken is done
This is a nice all in one pot recipe. Add the potatoes around the pieces of chicken, cut side up and sprinkle with rosemary, then season the potatoeswith salt and pepper
Thyme, lemon, onions and a little white wine (chicken stock can be substituted) come together with a basic vinaigrette to beautifully and deliciously season the chickenandpotatoes

Elaine cooks it withoutchicken so I have adapted her recipe to account for this (less oil and the inclusion of buttermilk to further tenderise the chicken) and tweaked the spicing a little too
