Ingredients

  • 1/4 cup olive oil
  • 2 garlic cloves, finely chopped
  • 2 tbsp chopped chives
  • 2 tbsp chopped flat-leaf parsley
  • 2 tbsp chopped sage
  • 1 tsp Dijon mustard
  • sea salt
  • freshly ground black pepper
  • 8 small bone-in chicken thighs (about 3 lbs total), skin removed
  • Roasted Thighs
  • Transfer the thighs to a platter and let rest 5 minutes before serving.
