Ingredients

  • 5 Poblano peppers
  • 1 (2 1/2-3 pound) boneless beef chuck roast, cut into 1 inch cubes
  • 2 Tbsp olive oil
  • 1 Medium onion, chopped
  • 3 Cloves garlic, minced
  • 1 Lb baby bella mushrooms, cleaned and sliced
  • 2 Tbsp unsalted butter
  • 2 Cups (32 Oz) beef broth
  • 1 (14.5oz) can diced tomatoes
  • 1/2 Cup fresh cilantro, roughly chopped
  • 2 Tsp worcestershire sauce
  • 1 Tbsp chili powder
  • 1 Tsp salt
  • 1 1/2 Tsps ground cumin
  • 1/4 Tsp red pepper flakes
  • 1/2 Tsp freshly ground black pepper
  • 2 Large potatoes, peeled and cut into 1 inch cubes
