Ingredients

  • 8 mini loaves
  • 2 tbsp flaxseed meal + 6 tbsp water
  • 6 tbsp olive oil
  • 1-1/2 C vegetable stock
  • 1 C medium grain yellow cornmeal
  • 3/4 C all-purpose or gluten-free flour blend
  • 1 tbsp organic sugar
  • 1-1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 C finely chopped roasted red bell peppers, drained well (you’ll need about 4 red bell peppers from the jar)
