Ingredients

  • 1/2 lb shrimp- peeled, deveined, and thawed if frozen
  • 1 clove garlic-minced
  • 1 tsp lime zest
  • pinch each kosher salt, pepper and red pepper flakes
  • 1 tbls olive oil
  • 1 1/2 limes 2 tbls minced red onion
  • 1-2 tsp minced jalapeño
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup grape tomatoes
  • 1/2 cucumber-peeled or not (I always just peel in stripes) chop a med dice
  • 1/4 cup cilantro- roughly chopped
  • 2 ripe avocados
