Ingredients

  • 2 medium sweet potatoes, peeled and cut into bite-sized pieces
  • 4 tablespoon olive oil, divided
  • 1/2 tablespoon Dijon mustard
  • 3 tablespoons olive oil
  • Juice from 1/2 a lemon
  • Salt & Pepper
  • Generous 2-3 handfuls of arugula
  • 2 scallions, sliced
  • 1/2 tablespoon parsley, chopped
  • 2 tablespoons crumbled feta cheese, for serving
  • 1/4 cup candied walnuts, see note
