Ingredients

  • 4 large sweet potatoes
  • 1 tablespoon extra
  • 1 large onion, chopped
  • minced
  • 12.3- ounce packages firm silken tofu
  • ¾ cup unsweeetened nondairy milk, as needed for a smooth sauce
  • 1 pound mixed mushrooms, cleaned, stemmed, and sliced
  • ¼ cup dry white wine
  • ¼ cup minced fresh parsley
  • ½ teaspoon salt, or to taste

  • 2 cups grated vegan mozzarella
