  • 1 small container mushrooms, washed and sliced
  • 1 tbsp olive oil
  • 1 can black beans, rinsed and drained
  • 1 tsp chili powder
  • 2 garlic cloves, minced
  • 1/4 cup parsley (or cilantro)
  • 2 cups red enchilada sauce
  • 10 small tortillas
  • 1 cup shredded cheddar cheese
  • salt and pepper to taste
  • 1/2 avocado for topping
  • 1/3 cup sour cream for topping
