Ingredients

  • 6 to 8 servings]
  • For the roasted vegetables
  • 1 red bell pepper, seeds removed and sliced
  • 1/2 pound asparagus, cleaned, bottom part of stem removed
  • 1/4 pound oyster mushrooms separated into pieces
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 to 1/4 teaspoon black pepper
  • For the paella
  • 4 1/2 cups vegetable broth
  • Pinch of saffron threads
  • 1 tablespoon extra virgin olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, drained
  • 2 C arborio rice
  • 1/2 cup white wine
  • salt and pepper to taste
  • 6 to 8 ounces frozen artichokes, thawed and rinsed (I used Trader Joe's)
  • 1 cup frozen peas, thawed
