Ingredients

  • 2 medium potatoes and
  • 2 carrots
  • in
  • 1 onion into thin slivers and put in a bowl.
  • 4 cloves of garlic and mince a 2" piece of ginger and put in separate pinch bowls.
  • 2-3 T In
  • 1 1/2- 2 t chili sauce
  • 3 t salt
  • 1 1/2 t black pepper
  • 2 T of oil and then saute the onion, garlic, and ginger
  • 2 minutes
  • 1/2 can of coconut milk (I like to use the regular coconut milk--sometimes I do one regular and one low fat), and cook until the chicken is done.
  • 2 T of cornstarch into the rest of that can of coconut milk and add that and another whole can and stir into the sauce.
  • 5-10 minutes (6) Taste it and adjust any seasonings--more curry? more chili sauce? more salt? more pepper?
