Ingredients

  • 20 small buns
  • Filling
  • 65 g ....................... Egg yolks
  • 30 g ....................... Granulated sugar
  • 5 g ......................... Custard powder
  • 50 g ....................... Unsalted butter, melted and cool
  • 3 ........................... Salted egg yolks
  • Steam bun dough
  • 140 g ..................... Cake flour
  • 35 g ....................... Bread flour
  • 5 g ......................... Baking powder
  • 2.5 g ...................... Instant yeast
  • 1 g ......................... Salt
  • 26 g ....................... Granulated sugar
  • 105 g ..................... Water
  • 9 g ......................... Rice bran shortening (non-hydrogenated rice barn oil shortening)
  • Let it rest for 15 minutes (cover with damp cloth or plastic wrap).
  • Steam for 3-5 minutes.
  • Serve hot, and enjoy!
