  • 1/2 teaspoon chopped thyme

  • 1/4 cup fresh bread crumbs
  • 1 egg, beaten
  • 4 cups beef stock

  • 6 beets, well scrubbed
  • 3 tablespoons butter
  • 1 onion, diced
  • 2 carrots, diced
  • 1 leek, diced
  • 2 tablespoons red wine vinegar
  • 6 cups beef stock
  • 1 Idaho potato (about 8 ounces), peeled and diced
  • 1/2 head small cabbage (about 1 pound), diced
  • 2 bay leaves
  • 1/2 teaspoon chopped thyme
  • 1/2 cup sour cream, for garnish
  • 1 teaspoon minced parsley, for garnish
