  • 24 Comments · In Fall, Fall Food, The Holiday Collection I think I left off yesterday with you all where I was riddled with guilt over the injuries our poor hen Coco sustained when she was attacked by what we figure was a possum. If you missed that post you can find it here. Sadly, she is not doing well. I fear that in fact she may not survive. We have her separated from our flock for her protection. Today we let her out to stretch her legs and get some fresh air…the other hens were mean to her followed by Max (the goat) pulling feathers out and eating them!!!! Why in the world would he do that?
  • 1 1/3 cups sugar
  • 7 ounces almond paste (1 tube)
  • 3/4 plus
  • 1/4 cup flour separated
  • 1 cup unsalted butter, at room temperature, cut into cubes
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 6 large eggs, at room temperature
  • 4 ripe but firm pears peeled and sliced into thick slices (see photo)
  • Demerara sugar (just to sprinkle over pears)
