  • 1 medium delicata squash
  • 11 cup chopped red onion
  • 13 cups sliced fresh cremini mushrooms
  • 11 cup chopped orange sweet pepper
  • 12 tsp. dried sage, crushed
  • 12 cloves garlic, minced
  • 1¼ tsp. smoked paprika
  • 1¼ tsp. black pepper
  • 1 Sea salt, to taste (optional)
  • 13 cups vegetable stock
  • 11½ cups beluga lentils, rinsed and drained
  • 1½ cup unsweetened apple juice
