I have been experimenting with raw creamy sauces and dressings for a kalesalad after my love for Lacinato KaleSalad with Dried Cranberries, Cashews, Apple & Curried Dressing
The Davis Square Farmers' Market was amazing yesterday and I came home with a truckload of goodies - purple cabbage, cherry and heirloom tomatoes, squash, blueberries, dill and cilantro, cucumbers, and string beans
Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in another bowl, pour over the salad, and gently toss to mix
Wash tomatoes, cut each in half and add to bowl with the avocado. If I am making a salad, in a hurry, I stick to greens and don’t bother with even tomatoes or cucumbers
The juicy orange wedges complement the lime-flavored kale leaves nicely, while the creamy avocado chunks (and crunchy raw almonds) balance the sour notes and make the salad addictively satisfying
The kale is massaged with a bright mustard-citrus dressing while the roasted chickpeas and broccoli add a layer of savory, earthy flavors and a hint of spice – and of course we can’t forget the creamy avocado
In a medium size bowl add the chickpeas, cucumber, avocado, tomatoes and olives. Avocado with a Greek style dressing, light and perfect for the hot summer days
Reassemble the tomato, with the arugula salad in between each slice. Tomatoes,. Next, cut the avocado into thin slices and place on top of the mozzarella layer
Babykale, which is available in the produce department of many grocery stores, makes easy work of this salad and is more tender than its full-grown counterpart
