Stir in the onion mixture, spinach, parsley and nutmeg, and cook until the spinach wilts. For freezing and reheating, allow the lasagna to cool completely
Top with half of the fresh baby spinach, next add half of the meat and onion mixture, followed by a bit of mozzarella and parmesan, and lastly spoon a little marinara on top and spread carefully
The spinach really takes center stage in this dish and the prosciutto give a nice salty bite. Cook lasagna noodles according to package and drain when done

In a medium bowl toss the spinach, quinoa, grapefruit, and vinaigrette until well combined. I absolutely love quinoa, and in a salad is my favourite way to eat it
