  • 14 ounces sweetened condensed milk, divided
  • 1 large whole egg, room temperature
  • 5 large egg yolks, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon corn syrup
  • 2 tablespoon water
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 3/4 cup heavy cream, warmed to at least 100°F
  • 1/2 cup whole skinned almonds, toasted
  • Maldon sea salt crystals, to taste
